1 cup water
1 cup uncooked couscous
1/2 lb frozen uncooked shrimp, thawed and peeled
1 1/2 cherry tomatoes, halved
1/2 lb baby bocconcini balls
1/2 cup chopped roasted red peppers
1/3 cup chopped fresh basil

Directions:
Directions:
Bring water to a boil. Stir in the couscous. Cover, remove from heat, and let stand for 5 minutes.

In a large bowl, combine the couscous, shrimp, tomatoes, bocconcini balls, roasted red peppers, and basil. Toss gently to combine.

Use balsamic vinegar as a dressing. Italian, Roasted Red Pepper, or Greek salad dressings are also good.
