3 cups diced left over corned beef
2 tbsp butter
1 cup chopped onion
1/2 cup green chopped bell pepper
1/2 tsp dried thyme
2 tbsp spicy or grainy mustard
16-24 oz hash brown potatoes, thawed
pepper and salt
1 and 1/2 cups shredded swiss cheese

preheat oven to 375
Grease 9 in or 2 and 1/2 qt casserole dish
Cook onion and bell pepper in 1 tbsp butter
Add butter, thyme and diced corned beef, sauté for 2 minutes
stir in mustard and set aside
Press the potatoes lightly in the greased baking dish, sprinkle with pepper, top with half of the shredded cheese, spoon corn beef over cheese, sprinkle rest of cheese over corned beef mixture
Bake 30-40 minutes until lightly browned
