2 Tbsp chopped fresh rosemary
2 Tbsp chopped fresh thyme
1 Tbsp lemon zest
1 Tbsp light brown sugar
2 tsp kosher salt
1 tsp fennel seeds (optional)
1 tsp garlic powder
1 tsp onion powder
1 tsp coarse black pepper
4 pieces boneless, skinless chicken breast (6 to 8 oz. each)
olive oil

Directions:

Combine the rosemary, thyme, zest, sugar, salt, fennel seeds, garlic, onion and pepper. Rub the mixture evenly into the chicken pieces, coating both sides. Place the chicken in a plastic food storage bag and chill several hours or overnight. To serve, heat olive oil in skillet over medium-high heat, add the chicken and cook for 12 minutes, turning occasionally. Remove from the heat, let rest a few minutes, then slice.
