3 lbs, pork loin
2 inch strip of lemon peel
2 cloves of garlic
rosemary
salt and pepper
Olive oil

Directions:
Prepare the brick. Wipe the meat and make some small incisions through the skin with a sharp knife. Insert a small piece of lemon rind and a small piece of garlic in each. Brush the meat with oil and season with salt, pepper and 1 Tbsp. of dried rosemary or 1 twig of fresh rosemary in the brick with the meat. You will need to pour off the excess fat before making a sauce or gravy from the juiced in the bottom of the brick. Cook in the usual way for 1 1/2 hours at 500º. Serve the pork with baked or pureed potatoes or a dish of butter beans.
