4 - 6 young dove
1 slice of bacon for each bird
dried thyme or 2 lg. branches of thyme
salt and pepper
1 clove garlic
a little olive oil

Directions:
Directions:
Prepare the brick. Wipe the dove with a cloth and brush with oil. Season with salt and pepper, bearing in mind that the bacon may be salty. Wrap each bird in a piece of bacon and put them in the brick with the thyme and cook for 1 1/2 hours at 500º. Dove cooked this way are good served with boiled rice of pureed potatoes...something to absorb their delicious sauce. And perhaps a salad, watercress or chicory.
