1 small Idaho potato
Jiff Crunchy peanut butter
1+ boxes confectioners sugar
Food coloring (optional)
Pinch of salt
1 tsp. vanilla extract
2 Tbsp. milk

Directions:
Directions:
Boil potato with skin on until done. Cool and peel potato. In a large bowl, mash the potato with a fork and add salt, vanilla, and milk. Add confectioners sugar a little at a time, mixing well as you go, until a stiff dough is formed. Shape into a ball and refrigerate until chilled. Add food coloring before chilling if desired.
Remove dough from refrigerator and sprinkle confectioners sugar liberally on cutting board or waxed paper. Roll out dough to form a thin (about 1/8") rectangular shape. Trim edges. Spread a very thin layer of peanut butter on entire surface of dough. Starting with the long edge, roll into jellyroll type roll. Refrigerate for about an hour. Remove roll and slice just before serving.

This recipe brings back so many memories of my Grandma Horton. She always made this at Christmas, and would sometimes dye the dough green or red (which was really more pink!). This candy is great if you are a peanut butter fan. You can use smooth peanut butter if you prefer it. Also be sure to use a potato no bigger than a baseball, or you will have enough candy to feed the whole neighborhood!
