13 oz. artichoke hearts, drained
10 oz. pkg. frozen spinach
1/4 c. chopped shallots (green onions)
1 garlic clove
1/2 c. Greek yogurt (can use fat free)
1/2 c. mayonnaise
2/3 c. shredded Parmigiano Reggiano cheese
4 oz. shredded Mozzarella Cheese
Salt and pepper to taste
Olive oil spray

Preheat oven 375º
1. Chop artichokes, garlic, and shallots.
2. Thaw spinach, drain. Press spinach between paper towel to remove excess moisture.
3. Mix all ingredients together.
4. Place in a baking dish and cook at 375º for 20-25 minutes.
