3/4 c. vegetable oil
3/4 c. whole nonfat buttermilk
2 c. sugar
2 tsp. vanilla extract
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 can crushed pineapple, drained
2 c. carrots
1 c. chopped walnuts
3/4 c. shredded coconut

Directions:

Preheat over to 350ºf grease or spray a 9x13 inch baking pan
With electric mixer, beat egg, oil, buttermilk, sugar and vanilla until blended
Add flour, baking soda, cinnamon, and salt
Mix until incorporated
Mix in pineapple, carrots, nuts and coconut
Pour into prepared pan
Bake for 55 min or until wooden pick inserted in the centre comes out clean

 

Cream Cheese Frosting

1/4 lb. butter
8 oz. pkg cream cheese
1 tsp. vanilla extract
2 c. powdered sugar
1 tsp. orange juice
1 tsp. grated orange peel

Cream butter and cream cheese until fluffy
Add vanilla, powdered sugar, orange juice and orange peel
Mix until smooth
Frost cake when completely cool
