Ingredients:  
Four cups sliced carrots
onions ( I use about 1/8 cup)
1/2 cup butter
1 cup sliced Velveeta
Croutons to cover

Directions:
Directions:
Boil carrots and onions until the carrots are still a little firm. Melt butter and cheese ( I do this in the microwave) and pour over carrots and top with croutons. Bake 350º until crisp, about 45 minutes. I cover with foil until the last 5-10 minutes.

Sometimes the cheese and butter don't want to blend so I use a whisk and have even used my mixer. This has long been a family favorite.
