6 oz. semi-sweet chocolate, chopped
1 c. butter, softened
2 tbsp. sugar
1 tsp. vanilla extract
2-1/4 c. flour
1/4 c. cornstarch

Melt chocolate in 2 cup Pyrex measuring cup in microwave, 2 minutes at 50% power. Cool.

Beat butter until fluffy; beat in chocolate until smooth. Beat in 2 tbsp. of the sugar and vanilla. Stir in flour in 3 additions, stir in cornstarch to make a firm, smooth dough.

On waxed paper, press dough into a 10 x 9 inch rectangle. Refrigerate for 30 minutes. Using a floured knife, cut into 2 x 1 inch bars. Place bars one inch apart on parchment-lined cookie sheets. Prick each cookie with fork. Refrigerate for 2 hours.

At this stage, you can freeze the unbaked cookies for up to one month, placed between waxed paper in an airtight container.

Bake one sheet at a time in a 325º oven for about 20 minutes. Let cool on racks for 2 minutes. Spread remaining 2 tbsp. sugar on a pie plate and roll cookies to coat all sides. Transfer to racks and cool.
