1 lb salt pork (sliced)
1 lb navy beans (soaked overnight and rinsed)
1 stalk of celery (sliced)
1 small onion (thin slices)
1/4 C molasses
Black pepper, to taste.

Directions:
Directions:
In medium sized baking dish, lay out pork on the bottom. Add celery and onion, then add, beans. Pour in molasses. Fill dish with water, enough to cover the beans completely. Add pepper. Bake at 300º for 5 to 6 hours. Stir occasionally, adding water when needed, to maintain coverage.

This is a recipe from my French mother-in-law. It is not a sweet dish and counts on the salty/pork flavor for its appeal. Once I acquired a taste for these, they became my favorite beans. The all-day aroma, while they cook, is very cozy too.
