1-1/2 c. sugar
3 eggs
3/4 c. vegetable oil
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. allspice
2 c. mashed ripe bananas (about 6)

Directions:
Directions:
Preheat oven to 350ºF. Grease and flour a bundt pan or two loaf pans.

Beat sugar and eggs until creamy. Mix in oil. Whisk together flour, baking soda, salt, cinnamon and allspice. Add to liquid mixture. Stir in bananas.

Pour into prepared pan(s). Bake for an hour or until a toothpick inserted in the centre comes out clean. Cool on wire rack. Turn out of pan when cool.

This is a great way to use up overripe bananas. I usually pop bananas in the freezer until I have enough, and then thaw them to put in the bread.
