2 cups mashed potatoes (no milk or butter, just mashed)
1 1/2 cups white sugar
3 Tbsp. melted butter
3 eggs (beaten)
1 cup milk
5 cups flour
1 tsp. salt
5 tsp. baking powder

Directions:
Directions:
Mash potatoes well then add melted butter, sugar, eggs, and milk. Mix well. Add flour, salt, and baking powder and mix well. Chill 3-4 hours or overnight. Roll dough out 1/2 inch thick. Cut into doughnuts. Heat and use Lard (only) to 350º. Gently place doughnuts into lard and fry until golden brown on one side, then flip over and fry till golden brown on other side. Remove and lay on cooling rack in a jelly roll pan. Let cool and Enjoy.
