1 large head of Napa cabbage, shredded
Olive oil
1 (3 ounce) package of ramen noodles, crushed
1/4 to 1/2 cup sesame seeds
3 oz. blanched slivered almonds
1 cup Canola oil
2 tsp. soy sauce
2/3 cup white sugar
2 Tbsp. balsamic vinegar
6 Tbsp. white wine vinegar

Note: Add more or less almonds, sesame seeds, or ramen noodles to your liking. I like a lot of crunchies.

1. Shred cabbage in large bowl. I use very little of the thick vein in the center of cabbage leaves. Cover and refrigerate for 30 minutes.
2. Mix almonds, sesame seeds, and ramen noodles together and add just enough olive oil to lightly coat. Place on jelly roll pan or in a cake pan and spread out into thin layer and bake at 350º until toasted lightly brown. Set aside to cool.
3. Prepare the dressing by mixing the Canola oil, soy sauce, sugar, balsamic and white wine vinegars together in a blender until smooth.
4. About 30 minutes before serving, toss the dressing and cabbage together and chill. Just before serving, toss almond, sesame seed, ramen noodle mixture into cabbage and dressing.
5. If traveling a distance before serving, keep dressing in separate container as well as the almond, sesame seed, ramen noodle mixture. Then combine when you arrive. This works well just for home too. Keep cabbage, dressing, crunchies all in separate containers and mix together as desired and you can have fresh crisp and crunchy salad for a week plus.
