1-2 blocks of Icelandic brand frozen Haddock (available at Giant or Karns)
1/2 tsp. parsley
salt
pepper
lemon juice
Old Bay Seasoning
small baking rack for bottom of pan
1/2 stick butter
Aluminum foil

Directions:
Directions:
Remove wrap from Haddock. Rinse with cold water. Lay down sheet of aluminum foil and place fish on foil. Season top of fish with salt, pepper, old bay, 2 pads of butter, parsley and a few drops of lemon juice. Wrap frozen fish tightly in foil. Place small cooking rack in bottom of a large chicken fryer pan on top of stove. Pour water in pan (enough to come to the top of the rack). Place foil wrapped fish on rack. Cover pan with lid and bring water to a boil. Simmer and steam on medium to medium-high heat for 40-50 minutes. Serve with melted butter, rice, and stewed tomatoes.
