5 lbs. red skin potatoes (leave skin on)
1-2 c. Hellmann’s mayonnaise (enough to coat potatoes)
2 sweet onions, chopped
1 lb. crispy fried bacon, crumbled
1 lb. grated Cooper Sharp Cheddar Cheese
Salt and Pepper

Directions:
Boil potatoes in salted water at a medium boil for 10 minutes. Do not overcook potatoes. Drain potatoes and let cool. Then mix potatoes with Hellmann’s mayonnaise until well-coated. Then add 1-2 sweet chopped onions and 1 lb. crumbled crispy fried bacon. Add 1 lb. grated Cooper Sharp cheddar cheese. Salt and Pepper to taste. Mix all together and bake at 350 degrees for 30 minutes or until heated thoroughly.
