2 cups of Whole Wheat Flour
1 cup ground Flaxseed
2 cups old fashioned Oats
3/4 cup Brown Sugar
1 Tbsp. Baking Powder
1 Tbsp. Baking Soda
1/2 tsp. Cinnamon
2 Eggs or 4 Egg Whites
1 1/2 cups Skim Milk
1/3 cup Canola Oil
1 3/4 cup mashed Bananas (2-3 medium)
1 tsp. Vanilla
3/4 cups semi-sweet mini Chocolate Chips
Cooking Spray

Directions:
Directions:
Combine all dry ingredients in a large bowl. In another bowl, slightly beat eggs. Add milk, oil, mashed bananas and vanilla and blend with a wire whisk until smooth. Combine egg mixture with dry ingredients and stir gently. Batter will be slightly thick. Stir in mini chocolate chips.

Spray muffin tins with cooking spray and fill 2/3 full with muffin mix. Bake at 375º for about 18 minutes.
