Pork Rub:
1/4 cup brown sugar
1/4 cup paprika
4 1/2 tsp. coarse salt
1 tbsp. cocoa
2 tsp. cayenne pepper
1 tsp. ground cumin
Barbecue Sauce:
2 tbsp. oil
1 small onion
2 cloves minced garlic
1/4 tsp cayenne pepper
1/4 tsp. ground cumin
6 oz. of tomato paste
28 oz. can crushed tomatoes
12 oz. can applesauce
1/3 cup cider vinegar
2 tbsp. brown sugar
2 tbsp. coarse salt
1/2 tsp. black pepper
2 cups apple juice

Directions:
Mix together the pork rub and rub into the pork shoulder. (You wont use it all) Cook the shoulder, covered in a slow oven for a long time. About 18 hours. Let cook a bit, and remove the fat and bones. For the BBQ sauce heat the oil and cook the onion and garlic for 1 minute. Add the other ingredients and cook on low until it gets as thick as you like. Stir often. This will make enough sauce for a whole pork shoulder.
