2 cans black beans, not drained
2 cloves garlic minced
1 large onion, chopped
1 large green pepper, chopped
2 bay leaves
salt and pepper to taste
2 tbsp. olive oil
1 tsp. oregano
2 tbsp. white vinegar

Directions:
Directions:
Heat olive oil in large skillet, add onions, garlic and pepper and cook until softened (about 8 minutes). Add black beans, oregano, bay leaves and vinegar and cook over medium heat for about 10 minutes. Serve with rice.

This is super good with pork. A variation is 1 can pinto beans and 1 can black beans. This is Desmond's favourite.
