1 lb. dried red kidney, cranberry, or pinto beans
1 lb. turkey or other type of andouillie sausage
1 small yellow onion, diced
1 bunch of green onions diced, including some of the green tops
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1 stalk of celery, diced
1/2 tsp. cayenne pepper
1 1/2 tsp. chili powder
2 bay leaves
1/2 tsp. coriander
1 tsp. minced fresh garlic

Rinse and sort beans. Place in soup pot and cover with water to 2" above beans. Bring to a boil, cover, remove from heat, and set aside for 1 hour without uncovering.
Cut sausage in "coins". then in quarters. Brown sausage lightly in 2 Tbsp. olive oil in skillet over medium heat. Remove from oil.
Add onion, green onion, celery, peppers, and garlic to oil, and cook over medium heat, stirring constantly, until just tender and onions are beginning to turn translucent.
Remove from oil and add to sausage.
After beans have set aside for 1 hour, drain and rinse. Add sausage, vegetables, and spices, and enough water to cover 2" above level of bean mixture.
Bring to a boil, reduce heat, and cook covered, over medium low heat, stirring frequently, until beans are tender. Salt to taste.
To thicken bean mixture, remove about 1/2 cup of beans, mash, add back to pot, and mix well.
Serve over white rice.
