1 ½ boneless beef rib eye
1 Tbsp butter
3 Tbsp oil
1 small onion, chopped fine
1 ½ Tbsp flour
½ cup beef broth
½ Tbsp Dijon mustard
1/8 Tbsp nutmeg
¼ cup sour cream
Egg Noodles

Directions:
Directions:
Cut ribeye into 1/8 inch strips.

Melt butter with oil in a skillet over high heat. Add beef and brown.

Remove beef and set aside. Reduce heat to medium and cook onion until soft. Add flour and cook until foamy. Stir in broth and mustard until thick. Return beef to pan and add nutmeg then sour cream.

Serve over egg noodles
