2 Tbsp. meringue powder
1/2 c. water
1 lb. powdered sugar (3 3/4 c.)
1/2 tsp. light corn syrup
1 tsp. vanilla extract

Directions:
Directions:
1. Beat meringue powder and water until foamy.
2. Sift the powdered sugar into the bowl and beat on low to combine.
3. Add corn syrup and vanilla. Beat until icing becomes shiny and forms soft peaks. Add desired coloring.
4. Use immediately to decorate cooled cookies, or cover with plastic wrap directly on the surface of the icing so the surface will not harden.
I decorate with a piping bag with a circular tip or using a ziploc with the corner cut off. Outline the edges first, then flood the interior with the same icing, thinning it with a little water if needed. This allows the icing to be very smooth and even over the surface of the cookie. Wait a few minutes for the background color to dry before adding other decorative touches on top.
