1-1/2 c. sugar
1 c. vegetable oil
1/2 c. orange juice
1/4 c. cocoa
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla extract
4 eggs
2 c. shredded carrots (about 3 large)

Preheat oven to 350º F.

Grease and flour (I usually substitute cocoa for flour) a 10- inch Bundt pan. In large bowl with mixer on low speed, beat all ingredients except carrots, just until blended. Increase speed to high and beat 2 minutes, occasionally scraping bowl. Stir in carrots. Spoon batter into pan.

Bake 50 to 55 minutes until toothpick inserted into centre of cake comes out clean. Cool cake for 10 minutes on wire rack, then remove cake from pan and cool completely on rack.

You can serve either as is or drizzle with chocolate glaze.

To make chocolate glaze, melt 2 squares of unsweetened chocolate and 1/4 c. butter in microwave on medium power for 3 minutes. Stir in 1 c. icing sugar and cream or milk to a pourable consistency (about 2 tbsp.).
