Shrimp:
1 1/2 lb. without heads
2 qt. of boiling water
1 qt. ice water with 1/4 c. salt

Remoulade Sauce:
2 tbsp. paprika
3/4 c. Dijon mustard
2 tbsp. ketchup
2 tbsp. horseradish
1/2 c. celery, finely chopped
1/4 c. onion, chopped
1 tsp. sugar
1 tsp. Tabasco
2 tbsp. parsley, chopped
1 c. corn oil

Shrimp:
1. Put shrimp into boiling water. When water returns to a boil, drain shrimp and plunge into salted ice cold water.
2. Peel and devein shrimp and serve on lettuce with Remoulade sauce.

Remoulade Sauce:
1. Mix together all ingredients except corn oil. Once mixed well, drizzle corn oil slowly into the sauce. Place shrimp into the sauce and stir.
2. Let shrimp marinate for 2-3 hours before serving to intensify the flavor.
