4 tablespoons butter
1 large onion, coarsely chopped
1 pound mushrooms, sliced
2 tablespoons chicken bouillon granules dissolved in 3 cups hot water
1/3 cup minced fresh parsley
3 tablespoons tomato paste
1 clove garlic, crushed
1/4 teaspoon pepper
1/2 cup dry white wine
1/2 cup each grated Jarlsberg, Parmesan, and cheddar cheeses, mixed together (may decrease to 1/4 cup of each cheese)

Directions:
Directions:
Melt butter in a Dutch oven over medium high heat.

Add onion and sauté until almost tender.

Add mushrooms and sauté briefly.

Stir in dissolved bouillon, parsley, tomato paste, garlic, and pepper. Increase heat and quickly bring to a boil.

Reduce heat and add wine.

Cover and simmer for 5 minutes.

Ladle hot soup into serving bowls and sprinkle with cheese.
