"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

2 tbsp. flour
Pinch of baking powder
Pinch of salt
Boiling water

Directions:
Granny mixed her dry ingredients, then stirred in the hot water a little at a time to get the right consistency. She turned it over in the bowl with her hands, and began a perfect rhythm: scoop, pat once, put in the hot grease. She never missed a beat, 1-2-3-4 until the pan was full. I remember she didn't use a lot of grease.
Now you tell me, how can you pin an art like she had down, to measure and counting? Cooking was her art! ~Patsy Pixley-Lambert~
