1 T. onion powder
1 T. garlic powder
2 tsp. black pepper
1 lb. lean beef sirloin tip, sliced in to 1/8 in. strips
1/2 c. brown sugar
2/3 c. soy sauce
1/4 c. terriyaki sauce
1/4 c. Worcestershire sauce
1/3 c. balsamic vinegar
5 T. liquid smoke
1/2 c. pineapple juice
1 tsp. red pepper flakes

1. In a small bowl, mix together the onion powder, garlic powder and black pepper. Season the meat lightly, using only part of the mixture. Reserve the remaining spices. Place into an airtight plastic container and refrigerate.

2. In a saucepan, over medium heat, mix together the brown sugar, soy sauce, terriyaki sauce, Worcestershire sauce, balsamic vinegar, liquid smoke and pineapple juice. Heat until the brown sugar has completely dissolved. Pour over the meat and mix by hand to coat really well. Seal the container and refrigerate at least 3 hours - no more than 24 hours.

3. Arrange the beef strips on the rack of a dehydrator, and sprinkle with a bit more of the spice mixture and red pepper flakes. Dry for 5 hours, or to your desired dryness.
