4 large Russet potatoes (about 2 pounds), peeled and cubed

1/4-1/2 c. whole milk
1/2 c. sour cream
4 oz. cream cheese, softened
1 1/2 c. grated sharp white cheddar cheese
1/4 c. chives, chopped
1 clove garlic, grated or pasted
3 jalapeño or Serrano peppers, chopped, or 1 can diced green mild chilies (4 oz. ), divided
Pepper, to taste
1 large egg yolk, beaten
2 T. canola oil
2 1/2 lbs. ground beef or hand-chopped bits of sirloin, brought to room temperature
3 T. ground chili powder
2 t. ground cumin
2 t. ground coriander
1 large onion, finely chopped
1 carrot peeled and diced
1/3 c. frozen peas
1/3 c. frozen corn
4 cloves garlic, finely chopped
2 T. Worcestershire sauce
3 T. tomato paste
1 bottle lager
2-3 c. beef stock
2 T. cornmeal or masa harina
1 can black beans (15 oz.), drained (optional)
1 can pickled jalapeños, for garnish

Cover the potatoes with water and bring to a boil. Salt the water and cook the potatoes to tender. Drain, return to the pot and mash with milk, sour cream, cream cheese, chives, garlic, half the chopped jalapeños or chili peppers, some pepper and the egg yolk. Cover the pan to keep the potatoes warm.

Heat the oil, two turns of the pan, over medium-high heat. Pat the meat dry and add to the hot pan; brown and crumble, then season with salt, pepper, chili powder, cumin and coriander. Stir to toast, then add the onion, carrots, garlic and remaining jalapeños or chili peppers, Worcestershire and tomato paste. Stir for 1-2 minutes, then add the beer. When the beer almost evaporates, add the stock, corn, peas,cornmeal and beans, if using, and simmer to thicken over low heat.

Place a rack in the center of the oven and turn on the broiler.

Transfer the chili to a casserole or individual bowls. Using a pastry bag or large food storage bag, pipe the potatoes on top of the chili. Transfer to the broiler to brown the potatoes. Top with pickled jalapeños and serve.

Chili meets shepherd's pie in this dish – you can prepare as a make-ahead meal and freeze or make chili ahead and potato topping on day of serving. Tip: Place your casserole on a rimmed baking dish in the oven to catch any spillover while broiling.
