3 large potatoes, sliced
vegetable oil
salt and pepper to taste

Directions:

Peel potatoes and slice into large French Fry size; and salt and pepper good. Heat the oil in a non-stick skillet to medium heat (must be a non-stick skillet according to my grandma). Add the potatoes and brown on both sides until golden brown. Drain the grease, put back on the fire on low and steep covered for at least 10 to 15 minutes. Turn the fire off, but do not remove the lid for another five minutes. Serve hot.

My husband, Keith loved my grandma Marie's fried potatoes! When he would come home from working on tow boats, she always made sure she had him a big skillet of potatoes waiting on him. Spoiled him rotten!
