4 T. olive oil
2 medium red onions, chopped
4 jalapeņo peppers, finely chopped
2 lbs. ground turkey (can substitute beef if desired)
6 cloves garlic, minced
4 T. taco seasoning
2 (14.5 oz.) cans black beans, drained and rinsed
2 (14.5 oz.) cans corn, drained
2 (14.5 oz.) cans fire roasted tex-mex tomatoes
1 c. salsa
2 (14.5 oz.) cans chicken stock
1 c. chopped cilantro
8 oz. cream cheese, softened
garnish with Mexican cheese, additional cilantro, sliced jalapeņos and sour cream

Directions:
Directions:
Heat oil in a large stock pot. Add diced onion and jalapeņos and saute until veggies are tender.

Add ground turkey and garlic to the pot and cook until meat is browned. Season with salt and pepper to taste. Add the taco seasoning and cook for a minute longer.

Add beans, corn, tomatoes, salsa, broth and cilantro. Allow the chili to simmer lightly, and cook lightly covered for 30 - 45 minutes.

Add cream cheese to the chili and stir until melted and creamy. Garnish with cheese, cilantro, sour cream and jalapeņos, if desired.
