Country Fried Chicken and Cream Gravy Recipe

Ingredients: 1 whole chicken cut up or 8 chicken pieces (legs and thighs are the family favorite) 1 pint buttermilk 1 tbsp red hot sauce 1 tsp salt
2 cups flour 1 tbsp ground poultry seasoning 1 tsp salt 1 tsp pepper crisco shortening or lard
3 tbsp seasoned flour (left over seasoned flour from coating chicken. 3 cups 1/2 & 1/2 or heavy cream 1 tbsp chicken base

Directions:CHICKEN Rinse chicken pieces and dry on paper towels. Mix buttermilk, red hot sauce and salt together. Add chicken pieces and stir so all pieces are coated. Soak for about an hour.
Mix together flour, seasoning, salt and pepper. Dip each piece of chicken in flour and coat well. Place on wire rack. Once all pieces are coated, dip in buttermilk and flour mixture. Place back on wire rack and let sit for about 10 minutes.
Heat Crisco/Lard in large iron skillet. Add chicken pieces and cook until browned on all sides. Place on parchment lined baking sheet and bake in 300º oven for 45 minutes.
CREAM GRAVY Discard all but 3 tbsp of the crisco/lard used when frying the chicken. Mix seasoned flour and pan drippings together. Slowly, over medium heat add cream and chicken base. Stir until blended and thick. Add a little more milk if it is to thick.
