Ingredients: 2 cups any kind of fruit (canned or fresh) 2 cups white sugar
1 box yellow or lemon cake mix 4 eggs 3/4 cup oil 1 1/2 cup fruit mixture ("worked" as described above and with proportionate amounts of the juice that's in the mixture)

Directions: |
Directions:Mix 2 cups of any kind of fruit (canned or fresh) with 2 cups of sugar. Store in a closed jar on the counter for four weeks before baking.
Prepare tube pan with oil and dust with flour. Mix ingredients and bake at 350º for 1 hour.
After cake has cooled, invert the pan onto a plate to remove the cake. Drizzle with white or lemon frosting. |

Notes: This cake requires some planning because you have to mix fruit and sugar ahead of time and let it "work" in a closed jar at room temperature for four weeks. She said you could add more fruit and sugar every week if you wanted to keep the mixture going for multiple batches. When using canned fruit, do not drain.
Grandma Hecker made this cake and wrapped sections as gifts every Christmas. It was a hit with our family and we always looked forward to it. I am not sure what she called it, but to us, it was "Grandma Hecker Cake"!
Years after she passed away, I found a piece of paper where I'd written down notes as to how she told me to make it.
I think she used canned "fruit cocktail" sometimes because I remember there were maraschino cherries in her best cakes.
