Ingredients: 3 English muffins - Split & toasted 12 Bacon strips - Thin & cooked 6 Eggs 3 tbsp. Half & half cream 1 tbsp. Butter 1 tbsp. Chives/Green onions - Chopped
Swiss Cheese Sauce 3 tbsp. Butter 3 tbsp. Flour 1 3/4 cup Milk 6oz Swiss Cheese - Shredded 1/3 cup White wine Pinch of Nutmeg & Pepper

Directions:Arrange muffins with one side up in a 12x7x2 baking dish. Place 2 bacon slices on each muffin had.
Beat together eggs, cream, pinch of salt of pepper & chives.
In a skillet over med heat melt butter. Pour in egg without stirring until mixture begins to set on the bottom and around edges. Using spatula lightly lift partially cooked eggs so uncooked portion flows underneath. Continue to cook for 3-4 minutes until cooked but still moist.
Remove from heat and evenly spoon eggs onto muffin and bacon stack.
Spoon swiss cheese sauce over muffin stacks. Cover and chill over night.
To serve: Bake at 375º for 25-30 minutes until heated through.
Swiss Cheese Sauce
In a medium saucepan melt butter. Stir in flour, pinch of nutmeg and pepper.
Add in milk all at once. Cook and stir until thickened and bubbly. Stir in swiss cheese until melted. Stir in white wine. |
