1 can spinach
4 eggs, beaten
1 cup mayonnaise
1 can cream of mushroom soup
1 cup grated cheese
1 Tbls grated onion, if desired
salt and pepper to taste

Directions:
Directions:
Drain spinach well. Mix with soup,mayonnaise, cheese, onion and seasoning. Fold in beaten eggs. Pour in greased casserole dish. Place dish in a pan of water. Bake at 350 degrees for 1 hour 15 minutes.

You can substitute asparagus or broccoli for the spinach. The original recipe called for asparagus or broccoli but I only had spinach in the pantry. The family loved it. I have only made it with spinach since.
