3 pound beef boneless chuck roast
1 c BBQ sauce
1/2 c apricot preserves (or peach jam)
2 tbsp chopped red or green pepper
1 tbsp Dijon mustard
2 tsp brown sugar
1 small onion, sliced
12 kaiser or hamburger buns, split

Directions:
Directions:
1. Remove excess fat from beef. Cut beef into 4 pieces. Place beef in slow cooker.
2. Mix remaining ingredients except buns; pour over beef. Cover and cook on low heat 7 to 8 hours or until beef is tender.
3. Remove beef from slow cooker. Cut beef into thin slices; stir back into sauce. Cover and cook on low heat 20 to 30 minutes longer until beef is hot. Fill buns with beef mixture.
