100g (4 oz) self-raising flour
Pinch of salt
25g (1oz) sugar
1 egg, beaten
125 ml (1/4 pint) milk
Lard (shortening) or oil

Directions:
Directions:
Place sieved flour and salt in a bowl with the sugar, then add the egg and milk and beat until bubbles rise to the surface. Heat a girdle or large heavy frying pan and rub lightly with lard or oil. Put tablespoons of the mixture onto the hot girdle well apart, and cook tip bubbles rise to the surface. Turn carefully with a and cook for a further minute till golden brown. Place on a wire rack in a clean tea towel while the rest are cooked. Serve warm with plenty of butter and home-made jam or jelly.
