4 cucumbers
1 small garlic clove
1 tsp sugar
1/4 tsp salt
1/3 c white vinegar
3/4 c full sour cream

peel cucumbers. using a fork, drag gently down the length of each cucumber to form little ridges (for appearances) Use food processor, mandoline or other tool to slice cucumbers very, very thing. Put in a colander over a bowl, and allow cucumbers to drain for at least one hour. (Patrick suggests mixing with salt and then allowing to drain.) Place drained cucumbers in a bowl.

chop or crush garlic and place in a bowl. Add salt, sugar and sour cream (if you used salt earlier, then don't use it now). Mix together and slowly add vinegar until combined. Pour over drained cucumber and toss to combine.

Refrigerate until read to serve. Top with chopped dill or paprika for decoration.
