6 cups (!3lbs) chopped green tomatoes
1 1/4 C chopped yellow onion
1 C apple cider vinegar (if you're using raw apple cider vinegar, use 3/4C vinegar, 1/4 C water)
1.5C packed brown sugar
2 t ground ginger
1 t sea salt
1/2 t ground cloves
1/4 t red pepper flakes
2 cinnamon sticks (or 1/4 t ground cinnamon)
3 whole star anise
2 T finely chopped crystalized ginger

Directions:
Directions:
Boil lids to jars to sterilize. Prepare boiling water bath for jars (deep large pot).

Combine all ingredients except crystalized ginger, and bring to boil. Reduce heat and simmer stirring regularly, until the liquid looks syrupy (not watery) ~ 1-1.5hrs

Stir in crystalized ginger and ladle into jars leaving 1/2" room. Clean rims and apply lids and rings. Tighten lid. Insert jar in water bath for 15 min.

This makes ~ 2.5 jars
