3 medium sweet potatoes, cubed
4 slices bacon
1/2 med-large onion
1 large Granny Smith apple
1/2 c of toasted pecans or walnuts
1 T olive oil
1/2 c chicken broth
1/4 tsp thyme (dried or fresh)
1/4 tsp allspice
1 T fresh parsley chopped

Directions:
Saute bacon in oil until browned. Add onion. Saute approximately 2 minutes more. Add potato and saute another 5 minutes. Stir in apple, broth, seasonings. Cook stirring often until potatoes are tender. Transfer to serving dish and sprinkle with toasted pecans and parsley.
