Ingredients: 4 c. onions, chopped 4 c. celery, chopped 8-10 large garlic cloves 4c. green pepper, chopped 4 c. carrots, sliced then rough chopped. 1 46 oz. can tomato juice 1 29 oz. can tomato sauce 1 29 oz. can crushed tomatoes 1 32 oz. box chicken broth 4 lbs. tilapia, thaw if frozen, cut in bite size 4 lbs. raw shrimp, thaw if frozen, peeled and cleaned 4 lbs. scallops, thaw if frozen 4 6.5 cans clams, reserve juice of two

Directions:1.) In large stock pot, sauté all the vegetables in olive oil. Add broth and bring to boil. 2.) Add the canned tomato ingredients and return to boil. Lower heat and simmer for a few hours. Season with 5 bay leaves. 1 T. each dried tarragon, salt, pepper and 2 T. each dried basil and thyme. 3.) In a large skillet, sauté each seafood separately in a small amount of butter. You want to give each a quick sauté and add to simmering stew to finish cooking. 4.) Add the clams and reserved clam juice to pot. Return to simmer another 30 minutes or so. Remove bay leaves. 5.) Serve with 26 cups steamed rice. LOL |

Notes: This recipe makes 52 cups, enough for everyone to have a 1/2 cup serving of rice with 1 cup serving of stew. However, at our Halloween party we usually serve 30 to 40 people and there's never been but a bowlful left!!!
