1 lb raw shrimp, shelled
1+ T curry paste (such as Patak's, mild, medium or hot to your taste)
3 cloves of garlic, chopped
1 jalapeno pepper, chopped, no seeds
1 c coconut milk
1 c chopped cilantro for garnish

Directions:
Directions:
Marinate the shrimp in the curry paste for 20 minutes or so. If longer, the shrimp will cook in the paste; put it in the fridge if longer.

Stir fry the shrimp, peppers and garlic.

Once cooked, add the coconut milk and heat through.

Serve over rice or pad thai noodles, and garnish with cilantro.
