CHERRY DELIGHTS:

2-8 oz. pkgs. Cream Cheese, 2 Eggs,
3/4 C. Sugar, 1 T. Lemon Juice,
1 tsp. Vanilla, Vanilla Wafers/Cherry Pie Filling.

Mix ingredients till creamy & smooth. Put vanilla wafers in muffin cups -
2/3 full with cream cheese filling. Bake @ 375 for 15 minutes. Cool. Top
with Cherry pie filling. Refrigerate until serving time. (21 cupcakes)

BANANA PUDDING:
3 1/2 T. all-purpose Flour, 1 1/3 C. Sugar, dash of Salt, 3 Eggs/separated, 3 C. Milk, 1 tsp. Vanilla extract, 1 (12 oz) pkg. Vanilla wafers, 6 med. Bananas, 1/4 C.+ 2 T. Sugar, 1 tsp. Vanilla extract.

Combine flour, 1 1/3 C. sugar & salt in a heavy saucepan. Beat egg yolks; combine egg yolks & milk, mixing well. Stir into dry ingredients; cook over med. heat, stirring constantly until smooth & thickened. Layer one-third of wafers in a 3 qt. baking dish. Slice 2 bananas & layer over wafers. Pour 1/3 of custard over bananas. Repeat layers twice. (Serves 8)

MERINGUE:
Beat egg whites (at room temp.) until foamy. Gradually add 1/4 C. + 2 T. sugar (1 T at a time) beating until stiff peaks form. Add 1 tsp. vanilla & beat until blended. Spread meringue. Bake 425 for 10-12 minutes.
