Olive oil
1 small onion, chopped fine
3 cloves garlic, minced
1 Serrano pepper, chopped fine
2 14.5 oz cans diced tomatoes
1 14.5 oz can chicken broth
Salt to taste
Black pepper to taste
Cayenne pepper to taste

Directions:
Directions:
Saute onion, garlic and pepper in oil until soft. Add tomatoes and simmer for about 15 minutes. Season with salt., black pepper and cayenne pepper. Add broth and continue simmering for at least 30 minutes. Taste and adjust seasonings. Puree in a blender or serve chunky. Use as a sauce for chili rellanos or over eggs.
