1 lb shrimp peeled, cleaned and washed
6 large crabs broken in halves with claws separated
2 large onions
1 bell pepper
3 ribs celery
6 cloves garlic
3 ripe tomatoes diced
salt, pepper and cayenne to taste
2/3 cup cooking oil
2/3 cup flour
2 gallons water
2 bay leaves
2 cups rice, cooked

In a large skillet, brown flour, making a dark brown roux, Add onions, bell peppers, celery, and garlic to flour. Cook over low heat stirring constantly, until onions are soft and slightly brown. Add water, tomatoes,and bay leaves, and bring to low boil, Add shrimp and continue cooking over low heat for an additional 30 minutes, stirring occasionally. Add crabs 10 minutes before serving. Serve over rice.
