2 large hog heads
2 hog livers
5 lbs. onions
10 cups rice
1 (3/4 oz.) can black pepper
1 (3/4 oz.) red pepper
salt

Directions:
Boil liver and jowls until tender. Cook rice. Cut liver, jowl, and onions and grind through food grinder, add seasoning. Mix cooked rice (still warm) with liver and onion mixture. Add sufficient broth from liver to make mixture soft enough to press through stuffer easily. Fill casing with liver pudding using sausage press.

Note: If casings and sausage press unavailable, pour in baking pans, spreading liver pudding 1 inch thick. Bake for 15 min. Cut into square and wrap for freezing.

Every farm family had a "hog killing" on a very cold day in winter. Ours was in February. The meat was prepared for the year. Neighboring farm families joined together for this "special " event. Sausage, liver pudding, hog head cheese, fat back, cured hams and shoulders, tenderloin, lard, and cracklings were made at this time.
