Ingredients:  
1/2 lb. cooked Smoked Sausage, 1/2 tsp. dried Thyme leaves,
6 C. Chicken broth, 1/4 tsp. black Pepper,
1 C. sliced Onion, 1-28 oz. can Tomatoes /drained,
1 C. chopped Celery, 1-48 oz. jar Randall mixed Beans,
2 cloves minced Garlic, 1/4 C. chopped Parsley,
1 tsp. Salt.

Cut sausage in to bite-size pieces or ham bone/ham off it. In a large pot, combine sausage, broth, onions, celery, garlic, seasonings & tomatoes. Bring to a boil & simmer, partially covered for 30 minutes. Add the mixed beans & cook on low for 30 more minutes. Add parsley, if desired.

If I have a ham bone w/some ham on it, I make my own broth by boiling the bone for an hour and cutting the ham off it. Sometimes I add salsa or/and a can of black beans.

Everyone loves this mixed bean soup, very different from white bean soup.
Little more trouble, but worth it. The recipe used to be on the jar of
Randall mixed beans. I like to serve it with corn bread & onions. A light dessert, like pudding and fruit.
