2-4 lb rump roast
pepper to taste
2 T oil
6-8 garlic cloves
salt to taste
1 envelope onion soup dip mix
2 T cornstarch
po boy bread

Directions:
Directions:
Season roast with pepper. Make slits in roast with knife. Place half garlic clove in each slit. Heat oil in large, heavy pot over medium heat, Brown roast well on all sides. Cover roast with hot water, add salt and pepper, Cover pot and lower to medium heat, Cook until roast is fork tender. Remove roast from gravy, cool, cover with foil and refrigerate. Remove fat from top of gravy after cooled, Slice roast into thin slices. Add soup mix and roast slices to gravy and simmer until beef is tender. Mix cornstarch with 1/4 cup cold water and stir into beef and gravy, Simmer several minutes more until thickened. Serve on bread dressed,

Don's Hint: Cut bread in half. Pile with roast beef and gravy on one half of bread, Add Blue Plate mayonnaise, lettuce, tomatoes and pickles. Put two bread together and enjoy. Another great sandwich which is called a Joe Don, just add ham and swiss cheese. Great sandwich.
