1 raw chicken cut into piece
1 cups panko flour
salt and pepper
cayenne pepper
water
cooking oil
4 pieces buttered toast

Directions:
Directions:
Add chicken pieces to salted water and soak overnight. Remove and pat chicken dry. Season chicken with salt, pepper and cayenne. Preheat oil. Place flour, salt, pepper and cayenne to taste in plastic bag, Shake chicken pieces in prepared bag and add to heated oil. Cook until brown on both sides, Place fried chicken on plate lined with buttered toast. Serve and eat.

Don's Hint: Use a heaping T of salt to 1 gallon of water for your brine to soak chicken overnight. Refrigerate covered at least 6 hours.
