HOT(BUFFALO) CHICKEN DIP:
2 (10oz) cans chunked Chicken, 1 1/2 C. shredded Cheddar Cheese, 2 (8oz) Cream Cheese, 2 T. finely chopped Onions (optional), 1/3 C. Pepper Sauce, 1 tsp. Lemon juice, 1 C. Ranch Dressing, 1/4 C. crumbled Blue Cheese (optional)

Heat chicken & pepper sauce, add cream cheese & ranch dressing, cook
slowly, mix in half of shredded cheese & cook until bubbling. Transfer to crock pot or 1 1/2 qt. shallow casserole, sprinkle w/blue cheese. Sprinkle remaining cheese over top. Cover & cook on low.

CONQUESO DIP:
1 lb. Velveeta Cheese/ cubed, 1 (16oz) jar medium Salsa,
2 T. chopped Cilantro, 1/2 lb. Hamburger,
1/2 lb. Sausage.

Crumble and cook sausage & hamburger in large saucepan over medium heat until browned. Drain. Cut cheese into cubes & add to sausage/hamburger mixture. Cook, stirring frequently until cheese is melted. Stir in salsa....Serve warm with tortilla chips.

Brian White introduced this Buffalo Dip to the family - YUM!!! Sometimes they get thick on top, so you need to keep both of these stirred. There are a lot of recipes out there for ConQueso dip, but this is my favorite.
