Cheese Straws or Cheese Wafers Recipe

1 lb. grated sharp cheese
1/2 c. Crisco
1 stick of margarine
3 c. unsifted plain flour
1/2 tsp. salt (double for wafers)
1/2 tsp. red pepper or cayenne pepper

For Wafers:
1 c. of finely chopped nuts or pecan half for each wafer

Directions:

Preheat oven to 350º
1. Leave grated cheese, Crisco, and margarine out over night or several hours.
2. Using mixer, cream cheese, Crisco, and margarine.
3. Mix salt with flour.
4. Slowly start adding flour to cheese mixture until all is mixed well.
For cheese straws:
5. Run dough through press.
6. Place straws on a slightly greased cookie sheet. Bake at 350° for about 10 minutes-until you can see the edges "almost" begin to turn brown.
For wafers:
7. Add one cup of finely chopped nuts or you can wait and add a pecan half topping off each wafer.
8. Roll cheese mixture into rolls and wrap each roll in wax paper. Rolls should be no bigger in diameter than a quarter (may have to cool mixture a short time in refrigerator before rolling).
9. Freeze the rolls.
10. Before baking, let the rolls sit out about 5 minutes or until the rolls will slice without crumbling.
11. Slice at an angle and place on a slightly greased cookie sheet.
12. Top each wafer with a pecan half (if you did not add chopped nuts)and press slightly (optional).
13. Bake about 10 minutes or until you can see the edges "almost" begin to turn brown.º
